Why does the absorption of water take place later in the large intestine?

If it was taken out at the beginning of the digestive process the bulk material would get stuck on the way through!

Explanation:

We ADD water (drinking and saliva) at the beginning of the process to further assist in the transport and digestion (also requires a liquid medium) of food as it passes through the alimentary canals. Removing "excess" for recycling/use in the body at the end of the process is the most efficient for the overall process.
