Start off by working out how many meatballs were made in the hour of production.

So, during one hour the number of meatballs made was:
$3 xx 802 = 2,406$

That is the same as:

$802+802+802 = 2,406$ for the three periods of $20$ minutes.

But there were then $2771$ meatballs altogether.

$2771 - 2406 = 365$
