The independent variable is what you change, the dependent variable is what you measure as a result of that change and the controlled variables are other independent variables that are kept constant so as to keep the experiment fair.

Explanation:

The independent variable of an experiment is the factor that you are changing. So with this experiment, it is likely to be the factor that affects the intermolecular forces such as temperature or type of substance.

The dependent Variable would be anything that you measure, That is effected by what you changed, for example, changing the substance decreased evaporation rate. The feature of the substance you used to measure the change in intermolecular force is your dependent variable.

The controlled variables are what you don't change so as to keep the experiment fair and constant. These would be features that would affect the outcome of the experiment if it were to change. For example, if we were changing substance, keeping temperature constant is a must so we can determine the difference between the two substances.

So in conclusion, the independent variable is what you change, the dependent variable is what you measure as a result of that change and the controlled variables are other independent variables that are kept constant so as to keep the experiment fair.
