iron atoms are the more stable atoms because they have the smaller mass defect that for Einstein equation (#E= mc^2#) corresponds to the minimun energy. You can calculate it from the difference between the sum of the molecolar mass of its costituents (protons neutron end electrons) and the molecular mass of the atom. So every nuclear process goes toward iron atoms
