How do you know when to use #e# in Exponential growth models?

Since the base of an exponential function can be changed to any positive number (except for 1), you can always use e or never use e; however, other bases might be more intuitive for some cases; for example, if you know the doubling time for a certain population, then base 2 might be a more natural choice than others.
