Because nickel is less reactive than hydrogen it's ions are more reactive in solution, so they will be displaced instead of hydrogen.
This is shown by the electrochemical series. If you look at the series all elements below hydrogen will be displaced instead of hydrogen and all above will cause hydrogen to be displaced.
