First there is nothing like OH .
Second , #H_2 # and #O_2# will not react to form anything if you just close them in a beaker .
To make them react the bond between two H atoms in #H_2# and the bond between two O atoms in #O_2# have to be broken by supplying enough energy and then the bonds reform to make water and release energy .
