To put it simply, ethers resist oxidation to the point where strong C-O bonds are cleaved, and reformed.

Explanation:

The ether linkage, the C-O-C bond, is strong as bonds go. Of course, we can form C=O bonds, but we can only do so if we break the C-C and C-O skeleton.
