Explanation:

Anhydrous copper sulfate is white; in aqueous solution, the #Cu^(2+)# ion gives a beautiful blue colour due to formation of the complex ion, #[Cu(OH_2)_6]^(2+)#.

The sulfate anion, is of course along for the ride.
