Evaporating water is a physical change.

The water changes into a gas which is a physical change. All the changes in states of matter are physical changes because we can turn them back to their original state. In all states it is still water, so no chemical change has occurred.
For example, If we evaporate water into gas, we can cool the gas back into water by condensation.
A condensation is a process to turn a gas into liquid by cooling.
