The main structural difference is an extra branch that comes of the cellulose structure.
Explanation:
Both contain amylose a helical polymer made of Alpha Glucose units. However cellulose has this extra addition. The linkage of amylopectin-64 around the helical structures is the sheer difference between our sugar (glucose becomes dextrose), and grass(also made of cellulose).Finally, amylopectin causes cellulose to be indigestible, not letting us be cows.
